Ingredients: 350g butter, 100g icing sugar, flavourings,
7 egg whites, 140g icing sugar, 100g nuts, 70g chocolate, 70g raisins, 350g flour, 300g candied fruit
- Make a batter from the butter, icing sugar and flavourings - i.e. beat the butter and sugar until creamy and gradually add the egg yolk). Beat 7 egg whites with 140g icing sugar to create stiff peaks and blend both mixes carefully.
- Stir in the nuts, chocolate, raisins, flour and candied fruits. Add to a loaf pan, Mocha cups, circular mould or similar which has been greased and dusted with flour and bake at 180 deg C.
- There are two ways to check that the mixture is cooked – when the mix comes away from the edge lightly or insert a wooden skewer – when you take it out the mixture should be dry.
My tip: soak the raisins for an hour beforehand ina bit of rum and put the candied fruit in some sugared water. This will make the fruit bread more moist.
