Kripperlroas at the Wolfgangsee – “the lake of a thousand crib figures”
The “Kripperlroas” – meaning the visit to several cribs on a walk – has been a well maintained tradition in the Salzkammergut for decades, particularly in Bad Ischl and in Ebensee.
From crib to crib
Visitors can marvel at 25 “crib stations” along the Wolfgangsee. To get from one crib to the next you can either take a boat across the Wolfgangsee, walk, drive or even take a horse drawn carriage on selected routes.

Beetroot soup - the vitamin-packed soup recipe you can try out at home
Ingredients for 4 portions
80g raw peeled potatoes
30g onion
10g fresh butter
150 ml single cream
150 ml milk
200 ml chicken stock or water
250g steamed beetroot
20g grated horseradish
1 small, sour winter apple
Salt
Preparation:
Cut the raw potatoes and onions into thin slices and slowly sweat them in butter, ensuring they do not change colour. Deglaze with the cream, milk and chicken stock and gently boil until the potatoes are soft.
Use a powerful mixer to blend the basic soup, the finely chopped beetroot, the fresh horseradish and the peeled and cored apple (works best in a mixing bowl). Add water or stock if necessary to reach the desired consistency. Only season with salt.
Important – only reheat shortly before serving otherwise you’ll lose many of the precious vitamins and minerals.
A tip from me: It’s best to buy the beetroot already steamed and sealed from your greengrocer.
